Stuffed Soft Pretzels

  • Author: Maria
  • Total Time: 1 hour

Ingredients

Scale

Here’s what you’ll need to make these delightful stuffed soft pretzels:

For the Pretzel Dough:

  • 4 cups all-purpose flour: The foundation of our pretzels.
  • 1 packet (2 ¼ teaspoons) active dry yeast: Helps the dough rise and gives it that airy texture.
  • 1 ½ cups warm water (110°F to 115°F): Activates the yeast.
  • 2 tablespoons sugar: Adds a touch of sweetness and helps with browning.
  • 2 teaspoons salt: Essential for flavor.
  • 1/4 cup baking soda: For the boiling water bath that gives pretzels their distinctive crust.

For the Stuffing:

  • 2 cups shredded cheese (like cheddar or mozzarella): The gooey goodness inside.
  • 1 cup diced ham or pepperoni: Adds a savory touch (feel free to skip for a vegetarian option).
  • Optional sweet filling: 1 cup cream cheese mixed with 1/4 cup sugar and 1 teaspoon vanilla extract, or chocolate chips for a dessert twist.

For the Topping:

  • Coarse sea salt: For that classic pretzel finish.
  • 1 egg, beaten (for egg wash): Gives a beautiful golden color.

Instructions

Step 1: Prepare the Dough

  1. Activate the yeast: In a large mixing bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy. This means your yeast is alive and ready to go!
  2. Mix the dry ingredients: In a separate bowl, whisk together the flour and salt.
  3. Combine: Gradually add the flour mixture to the yeast mixture, stirring until a dough begins to form.
  4. Knead the dough: Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. This is a great workout for your arms!
  5. First rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 2: Prepare the Stuffing

While your dough is rising, it’s a good time to prepare your filling.

  • If you’re using cheese and meat, simply mix them together in a bowl. If you’re going for a sweet option, mix the cream cheese, sugar, and vanilla until smooth.

Step 3: Shape the Pretzels

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. Boil the water: In a large pot, bring about 10 cups of water to a boil and add the baking soda. This step is crucial for getting that signature pretzel crust.
  3. Divide the dough: Once the dough has risen, punch it down to release the air. Divide it into 12 equal pieces.
  4. Roll out: Take one piece of dough and roll it into a long rope (about 12 inches). Flatten the rope slightly with your hands.
  5. Add the filling: Place about 2 tablespoons of your desired filling in the center of the rope, then fold the dough over the filling to encase it. Pinch the edges to seal.
  6. Twist into a pretzel shape: Shape the stuffed dough into a pretzel by forming a loop, twisting it, and tucking the ends underneath.
  7. Repeat: Continue shaping the remaining pieces of dough.

Step 4: Boil the Pretzels

  1. Boil: Carefully drop each pretzel into the boiling water one at a time. Boil for about 30 seconds per pretzel, then remove with a slotted spoon and place on the prepared baking sheets.
  2. Egg wash: Brush each pretzel with the beaten egg, and sprinkle with coarse sea salt.

Step 5: Bake

  1. Bake: Bake the pretzels in the preheated oven for 12-15 minutes, or until golden brown. Your kitchen will smell heavenly during this time!
  2. Cool: Once they’re out of the oven, let them cool slightly on a wire rack.
