Pear, Gorgonzola, and Honey Toast

  • 4 slices of your favorite rustic bread (sourdough, ciabatta, or baguette work well)
  • 2 ripe pears (preferably Bartlett or Anjou)
  • 2 oz Gorgonzola cheese, crumbled
  • 2 tbsp honey (plus extra for drizzling)
  • 1 tbsp olive oil (for brushing the bread)
  • Freshly ground black pepper, to taste
  • Fresh thyme leaves (optional, for garnish)
  • 1/4 cup chopped walnuts (optional, for crunch)

Instructions

  • Preheat your oven: Start by preheating your oven to 400°F (200°C). If you have a toaster oven, that works great for this recipe too.
  • Prepare the bread: Slice your bread into thick pieces, about 1/2 inch to 3/4 inch thick. Lay the slices on a baking sheet. Use a pastry brush to lightly coat each slice of bread with olive oil. This will give your toast that golden, crispy texture we all love.
  • Toast the bread: Place the bread in the oven and toast for about 5-7 minutes or until the bread is golden brown and crisp. You can also toast it in a toaster, but I prefer the oven because it gives an even crisp.
  • Slice the pears: While the bread is toasting, wash and core your pears. Slice them into thin, bite-sized pieces. You can peel them if you prefer, but I love leaving the skin on for texture and color.
  • Assemble the toast: Once the bread is toasted, remove it from the oven and arrange the pear slices evenly on top of each piece of toast.
  • Add the Gorgonzola: Sprinkle the crumbled Gorgonzola cheese over the pears. It will melt slightly over the warm toast, creating a creamy, tangy contrast with the sweetness of the pears.
  • Drizzle with honey: Drizzle honey over the pears and cheese. You can be generous with this, as the honey is a key player in bringing everything together.
  • Add black pepper: Give the toast a few cracks of freshly ground black pepper to add a bit of spice to balance the sweetness.
  • Bake the toast: Return the assembled toast to the oven and bake for another 3-5 minutes, just long enough for the cheese to melt and everything to meld together. You want the cheese to soften and become slightly bubbly without burning.
