For the hamburger steaks:
- 1 lb ground beef (80/20 or 85/15 for best results)
- 1 small onion, finely chopped
- 1 egg
- ½ cup breadcrumbs (or panko)
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp vegetable oil (for frying)
For the onions and gravy:
- 1 large onion, thinly sliced
- 2 cups beef broth
- 2 tbsp flour (for thickening the gravy)
- 2 tbsp butter
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- Salt and pepper to taste
Instructions
Step 1: Prepare the Hamburger Steaks
- In a large mixing bowl, combine the ground beef, finely chopped onion, egg, breadcrumbs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined. Don’t overmix—this will keep the hamburger steaks tender!
- Divide the mixture into four equal portions and shape them into oval patties (about ½-inch thick). You can make them round like burgers, but shaping them into ovals gives that classic “steak” look.
Step 2: Cook the Patties
- Heat 2 tbsp of vegetable oil in a large skillet over medium heat. Once the oil is hot, add the hamburger patties. Cook for about 4-5 minutes per side, or until they’re nicely browned and cooked through. Transfer the cooked patties to a plate and set them aside.
Step 3: Caramelize the Onions
- In the same skillet (don’t wipe it out—you want those flavorful brown bits!), add 2 tbsp of butter. Once melted, toss in the thinly sliced onions.
- Cook the onions over medium heat, stirring occasionally, for about 10-12 minutes or until they’re soft and caramelized. If they start sticking, you can add a splash of water or beef broth to help them along.
Step 4: Make the Gravy
- Sprinkle 2 tbsp of flour over the onions and stir to coat the onions. This will help thicken the gravy.
- Slowly pour in the beef broth while stirring constantly to avoid lumps. Add Worcestershire sauce and soy sauce for extra flavor.
- Bring the gravy to a simmer, stirring frequently, until it thickens—about 5 minutes.
- Season the gravy with salt and pepper to taste.
Step 5: Combine and Serve
- Return the cooked hamburger steaks to the skillet with the gravy and onions. Spoon the gravy over the top of the patties.
- Let the patties simmer in the gravy for an additional 5-7 minutes, allowing the flavors to meld together.
- Serve the hamburger steaks hot, smothered in the onion gravy.
