Garlic Roasted Potatoes Recipe

  • Author: Maria
  • Total Time: 40 minutes

Ingredients

  • 1.5 lbs (about 5 medium) baby potatoes, halved
    • Note: Baby potatoes are ideal as they roast up quickly and have a creamy, soft interior. But feel free to use russet or Yukon gold potatoes, just cut them into 1-inch cubes for even cooking.
  • 3 tbsp olive oil
    • Note: Olive oil adds a rich, fruity flavor and helps achieve that golden crispiness.
  • 4-5 garlic cloves, minced
    • Note: Garlic is the star here, adding deep, savory notes that pair beautifully with the roasted potatoes.
  • 1 tsp dried rosemary (or fresh, chopped)
    • Note: Rosemary’s earthy, piney flavor complements the garlic and potatoes perfectly.
  • 1 tsp dried thyme (or fresh, chopped)
    • Note: Thyme adds a delicate, herbal aroma that rounds out the flavors.
  • Salt and pepper to taste
  • Optional garnish: Fresh parsley or chives, chopped

Instructions

Step 1: Preheat Your Oven

  • Set your oven to 425°F (220°C). Roasting at high heat helps create those deliciously crispy edges while keeping the inside of the potatoes soft and tender.

Step 2: Prepare the Potatoes

  • Wash and dry the potatoes. No need to peel—keeping the skin on adds both flavor and texture.
  • Cut the potatoes in half, or into 1-inch cubes if you’re using larger potatoes. Aim for similar-sized pieces to ensure even cooking.

Step 3: Mix with Olive Oil and Seasonings

  • In a large mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  • Add the potatoes to the bowl and toss well to coat. Make sure each potato is well-covered in oil and seasonings—this is what will give them that lovely golden color and crispy texture.

Step 4: Arrange on the Baking Sheet

  • Line a baking sheet with parchment paper or foil for easy cleanup, then spread the potatoes in a single layer. Avoid crowding them, as this will prevent them from crisping up.
  • For extra crispiness, you can place the potatoes cut-side down.

Step 5: Roast the Potatoes

  • Roast in the preheated oven for 25-30 minutes. Halfway through, flip the potatoes to ensure even browning.
  • Tip: If you want extra crispy potatoes, broil them for an additional 2-3 minutes at the end of the roasting time, keeping a close eye to prevent burning.

Step 6: Check for Doneness

  • The potatoes are done when they’re golden brown, crispy on the outside, and tender when pierced with a fork. If needed, roast for an additional 5 minutes.

Step 7: Serve

  • Transfer the roasted potatoes to a serving dish and garnish with fresh parsley or chives, if desired. They’re best enjoyed hot and fresh out of the oven!
