Step 1: Preheat Your Oven
- Set your oven to 425°F (220°C). Roasting at high heat helps create those deliciously crispy edges while keeping the inside of the potatoes soft and tender.
Step 2: Prepare the Potatoes
- Wash and dry the potatoes. No need to peel—keeping the skin on adds both flavor and texture.
- Cut the potatoes in half, or into 1-inch cubes if you’re using larger potatoes. Aim for similar-sized pieces to ensure even cooking.
Step 3: Mix with Olive Oil and Seasonings
- In a large mixing bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Add the potatoes to the bowl and toss well to coat. Make sure each potato is well-covered in oil and seasonings—this is what will give them that lovely golden color and crispy texture.
Step 4: Arrange on the Baking Sheet
- Line a baking sheet with parchment paper or foil for easy cleanup, then spread the potatoes in a single layer. Avoid crowding them, as this will prevent them from crisping up.
- For extra crispiness, you can place the potatoes cut-side down.
Step 5: Roast the Potatoes
- Roast in the preheated oven for 25-30 minutes. Halfway through, flip the potatoes to ensure even browning.
- Tip: If you want extra crispy potatoes, broil them for an additional 2-3 minutes at the end of the roasting time, keeping a close eye to prevent burning.
Step 6: Check for Doneness
- The potatoes are done when they’re golden brown, crispy on the outside, and tender when pierced with a fork. If needed, roast for an additional 5 minutes.
