Cucumber Sandwich

For 4 servings (8 tea sandwiches):

  • 8 slices of white or whole-grain bread, crusts removed
  • 1 large English cucumber, thinly sliced
  • 4 tablespoons cream cheese
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon fresh dill, finely chopped
  • ½ teaspoon lemon zest
  • Salt and pepper to taste

Optional Additions:

  • 1 teaspoon chives or parsley, finely chopped
  • A pinch of garlic powder
  • Radish slices for extra crunch

Instructions

Step 1: Prepare the Spread

  1. In a mixing bowl, blend cream cheese, mayonnaise, dill, and lemon zest.
  2. Add a pinch of salt and pepper. Mix until smooth.

Step 2: Slice the Cucumbers

  1. Wash and dry the cucumber.
  2. Use a mandoline for even slices, no thicker than 1/16 inch.

Step 3: Assemble the Sandwiches

  1. Spread the cream cheese mixture evenly on each slice of bread.
  2. Arrange cucumber slices in a single layer on half the slices.
  3. Top with the remaining bread slices.

Step 4: Trim and Cut

  1. Use a serrated knife to remove the crusts.
  2. Cut sandwiches into your desired shape—triangles, squares, or rectangles.

Step 5: Serve and Enjoy
Serve immediately for the best taste and texture.
