- 8 slices of white or whole-grain bread, crusts removed
- 1 large English cucumber, thinly sliced
- 4 tablespoons cream cheese
- 1 tablespoon mayonnaise (optional)

- ½ teaspoon lemon zest
- Salt and pepper to taste
Optional Additions:
- 1 teaspoon chives or parsley, finely chopped
- A pinch of garlic powder
- Radish slices for extra crunch
Instructions
Step 1: Prepare the Spread
- In a mixing bowl, blend cream cheese, mayonnaise, dill, and lemon zest.
- Add a pinch of salt and pepper. Mix until smooth.
Step 2: Slice the Cucumbers
- Wash and dry the cucumber.
- Use a mandoline for even slices, no thicker than 1/16 inch.
Step 3: Assemble the Sandwiches
- Spread the cream cheese mixture evenly on each slice of bread.
- Arrange cucumber slices in a single layer on half the slices.
- Top with the remaining bread slices.
Step 4: Trim and Cut
- Use a serrated knife to remove the crusts.
- Cut sandwiches into your desired shape—triangles, squares, or rectangles.
