Instructions
Step 1: Cook the Pasta
- Bring a large pot of water to a boil. Add a generous pinch of salt—this is your chance to season the pasta itself.
- Add your pasta of choice and cook according to package instructions until al dente. Remember, the pasta will continue to cook slightly when you toss it with the sauce.
- Reserve 1 cup of pasta water before draining. This starchy water is liquid gold for perfecting the sauce later.
Step 2: Prepare the Sauce
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn it!
- Stir in the crushed tomatoes, red pepper flakes (if using), and a pinch of salt. Let it simmer for 10 minutes, allowing the flavors to meld.
- Reduce the heat to low and stir in the heavy cream. Watch as the sauce transforms into a velvety, blush-colored dream. Adjust seasoning with more salt and pepper if needed.
Step 3: Combine Pasta and Sauce
- Add the drained pasta to the skillet with the sauce. Toss until the pasta is fully coated, adding reserved pasta water a little at a time to reach your desired consistency. The sauce should cling to the pasta without being too thick or runny.
- Let the pasta cook in the sauce for 1-2 minutes to absorb the flavors.
Step 4: Plate and Top with Burrata
- Transfer the pasta to serving plates or a large platter if serving family-style.
- Carefully place burrata balls on top of the pasta. Use a sharp knife to gently score the burrata so the creamy center oozes out.
- Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese.
