Ingredients
Scale
For the Steak Bites:
- 1 pound sirloin steak: Cut into bite-sized pieces. Sirloin is tender and flavorful, making it perfect for this dish.
- 3 tablespoons unsalted butter: The star of the show! This adds richness and flavor to the steak bites.
- 2 cloves garlic: Minced, for that aromatic kick that brings everything to life.
- Salt and pepper: To taste. Always season to enhance the natural flavors of your ingredients.
For the Garlic Herb Potatoes:
- 1 pound baby potatoes: Halved or quartered, these will get crispy on the outside and fluffy on the inside.
- 3 tablespoons olive oil: Helps the potatoes crisp up beautifully in the oven.
- 1 teaspoon dried rosemary: Adds a lovely herbal note that pairs wonderfully with garlic.
- 1 teaspoon dried thyme: A classic herb that enhances the flavor of the potatoes.
- Salt and pepper: To taste.
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). This is the perfect temperature for roasting the potatoes until they’re golden and crispy.
- Prepare the Potatoes:
- In a large bowl, combine the halved baby potatoes, olive oil, dried rosemary, dried thyme, salt, and pepper. Toss everything together until the potatoes are evenly coated in oil and seasonings.
- Spread the potatoes out in a single layer on a baking sheet. It’s important to give them space so they can roast properly.
- Pop them in the oven and roast for about 25-30 minutes, flipping halfway through to ensure they get nice and crispy on all sides.
- Cook the Steak Bites:
- While the potatoes are roasting, it’s time to cook the steak. Heat a large skillet over medium-high heat.
- Season the steak bites generously with salt and pepper.
- Once the skillet is hot, add the steak bites in a single layer (you may need to do this in batches depending on the size of your skillet). Sear the steak bites for about 2-3 minutes on each side, or until they are browned and cooked to your liking. Don’t overcrowd the pan—this ensures a good sear!
- Remove the steak bites from the skillet and set them aside on a plate.
- Make the Garlic Butter Sauce:
- In the same skillet, lower the heat to medium and add the butter. Let it melt and begin to bubble.
- Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to let it burn!
- Return the steak bites to the skillet and toss them in the garlic butter until they are nicely coated. This step is what takes the dish to the next level—trust me!
- Combine and Serve:
- Once the potatoes are done roasting, take them out of the oven and toss them with a little more salt and pepper to taste.
- Serve the buttery steak bites alongside the garlic herb potatoes. You can drizzle any leftover garlic butter from the skillet over the top for an extra touch of flavor.
