  • Freshly ground black pepper

    • A squeeze of lemon juice

Instructions

Step 1: Prepare the Beet Hummus

  • The first thing you’ll want to do is prepare the beet, which will give your hummus that stunning vibrant color. If you’re roasting your beet, preheat the oven to 400°F (200°C), wrap the beet in aluminum foil, and roast it for 45 minutes to an hour, until it’s fork-tender.   • While the bread is toasting, cut the avocado in half and remove the pit. Scoop the flesh out with a spoon and mash it with a fork. For a smoother texture, you can mash it more thoroughly, but I love leaving it a bit chunky for extra bite. Season with sea salt, freshly ground black pepper, and a squeeze of lemon juice to brighten up the flavor.
