Plus, it’s so easy to make, and it’s a great way to use up leftover chicken. Whether you’re having a cozy night in or need a quick meal for a busy day, this sandwich is guaranteed to satisfy!
Ingredients
Scale
- 2 cups cooked chicken, shredded or diced
- 1/2 cup BBQ sauce (your favorite kind)
- 4 slices of bread (sourdough, whole grain, or white)
- 4 slices of cheese (cheddar, Monterey Jack, or mozzarella)
- 2 tablespoons butter, softened
- Optional toppings: pickles, sliced jalapeños, or coleslaw
Instructions
- Prepare the BBQ Chicken: In a medium bowl, mix the cooked chicken with the BBQ sauce until well combined. Adjust the amount of BBQ sauce to your taste. You can use store-bought or homemade sauce.
- Assemble the Sandwich: Take two slices of bread and layer half of the cheese on each slice. Top each with an equal portion of the BBQ chicken mixture. Add the remaining cheese on top of the chicken, then place the second slice of bread on top to complete the sandwich.
- Butter the Bread: Spread a thin layer of softened butter on the outside of each slice of bread. This will help achieve that perfectly golden and crispy crust.
- Cook the Sandwich: Heat a skillet or griddle over medium heat. Place the sandwiches in the pan and cook for about 3-4 minutes on one side until golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes on the other side, pressing down gently with a spatula to ensure even browning and melting.
- Melt the Cheese: Once both sides are golden and crispy and the cheese is melted, remove the sandwiches from the skillet. Let them sit for a minute before slicing in half.
- Serve and Enjoy: Serve warm, and feel free to add your favorite toppings, like pickles, sliced jalapeños, or a side of coleslaw for extra crunch!
